Recipe: Yasai Itame Yose Ramen

If your only experience of ramen noodles involved a microwavable cup, then you’re missing out on a true culinary tradition. Give this popular Japanese dish another taste with a recipe well worth the extra time it takes, courtesy of our friends at Princess Cruises.

Yasai Itame Yose Ramen
Serves 4

Ingredients:

3 cups Chicken broth or Vegetable broth or stock
1 ½ cups Ramen egg noodles (find in Asian fresh section of grocery store) or use spaghetti, cooked
½ cup Button mushrooms, sliced thinly
1 cup Spinach leaves, fresh, cleaned
½ cup Green beans, fresh or frozen
3 T. Green onions, chopped
1 cup Carrots, fresh, peeled, thinly sliced
1 cup Napa Cabbage or Green cabbage, shredded
½ cup Miso paste (found in Asian section of grocery store), optional
Cooked chicken, pork slices, or Surimi (imitation crab)- optional
Soy sauce, to taste
Salt & white pepper to taste

Method:

Heat a pot of water to boiling. Add carrots, mushrooms, green beans and cabbage. Cook until soft, then drain water. Reserve vegetables.

Heat chicken stock or broth in pot. Add fresh spinach, green onions, cooked pasta, and miso paste (if using). Heat until spinach is wilted. Add cooked vegetables and chicken or pork (if using).

Season with a dash of soy sauce, salt & white pepper to taste.
