Recipe: Soy-Glazed Salmon Fillets

Soy Glazed Salmon Fillets
Ingredients:
1/4 cup brown sugar
1/2 cup olive oil
3 tablespoons low sodium soy sauce
2 tablespoons fresh lime juice
2 tablespoons dry white wine
1/2 teaspoon freshly ground all spice
2 tablespoons minced scallion
4 seven-ounce salmon fillets
1 tablespoon corn starch
Sea salt to taste
2 limes, halved, for serving
Cooking:
Pre-heat oven to 350F
In a small saucepan over medium heat, stir together brown sugar, half the oil, soy sauce, lime juice, white wine, half the all spice and the scallion, and bring to a boil, stirring constantly until the sugar has dissolved. Whisk in the corn starch to thicken and adjust seasoning by adding salt to taste, if necessary. Set aside and keep warm.
Season salmon fillets with remaining all spice and sea salt to taste. In a medium skillet, heat remaining half of oil over high heat. Add salmon fillets and sear for 3 minutes on each side. Transfer salmon fillets to a baking sheet and cook until crispy golden brown on the outside, but still bright pink inside, about 15 minutes. Remove and glaze with the sauce before serving. Serve with lime halves.
