Recipe: Bayrischer Wurstsalat

Here’s another fantastic recipe straight from the kitchens of Viking River Cruises.

Bayrischer is a traditional Bavarian dish typically served in beer gardens. Try this cold cut salad with a nice lager.

Recipe by Reiner Marks, Director, Business Development, former Viking River Cruise Executive Chef

Ingredients:

• 1/2 lbs Lyoner or bologna,
• 1/3 lbs Emmenthal cheese (swiss)
• 5 oz dill pickles, cut into thin strips
• 4 oz red onions, sliced
• 1 oz vegetable oil
• 1 oz pickle juice
• 1 oz white wine vinegar
• 1 tbsp sugar
• Salt and pepper to taste
• Parsley for garnish

Preparation:

1. Cut the cold cuts and cheese into 1/3 inch wide strips and combine with the pickles in a bowl.
2. Add onions, oil, vinegar and spices and gently mix.
3. Refrigerate covered for 20 minutes and serve with oven fresh pretzel or dark bread.

Prep time 30 minutes.
