Here’s another great recipe, courtesy of our friends at Viking River Cruises.

Obatzter is a Bavarian full-flavored cheese spread. This German beer cheese spread is a MUST in each beer Bavarian Beer garden and a very popular Octoberfest specialty.

Recipe by Reiner Marks, Director, Business Development, former Viking River Cruise Executive Chef

Ingredients:

• 11 oz. Ripe camembert or Brie, cut into pieces
• 3 Tbsp Butter, softened (or whipped cream cheese)
• 1 Small red onion, minced
• 1/3 c Beer
• 2 tsp Sweet Paprika
• 1/3 tsp Ground caraway
• White pepper and salt to taste

Preparation:

1. Combine all ingredients in a bowl. Use a fork to mix them into a smooth spread and refrigerate for at least one hour.
2. Serve with oven fresh rustic breads and/or pretzels. Garnish with finely chopped chives.
