Recipe: AmaWaterways’ Belgian Fries

When you think fries, most people immediately add the word “French” — but today we’re swapping out France for Belgium with this yummy recipe from our friends at AmaWaterways.

When you think about Belgian delicacies, what comes to mind? Famous, decadent chocolate? Or maybe strawberries and cream covered waffles? Perhaps savory sausage?

How about their fries? Fried potatoes have deep roots in the Belgian culture. Call them “French fries” here and you’ll get strange looks from the locals. Partly because the Belgians believe that they are the originators of “fries”. Take one bite of these hand-cut, golden slices of heaven and your taste buds will start to understand why. The delicious flavor comes from the way the Belgians prepare the potatoes. They’re fried twice: first for tenderizing, then again for crisping before serving – a process that yields exceptionally scrumptious results. Sprinkle with a bit of salt, serve in a metal cone and there you have it – elegant Belgian fries that are sure to please any palate. After your first taste, you’ll understand why Belgians are proud to call these crispy sensations their own.

  • Peel and rinse Yukon Gold potatoes (or any soft potato)
  • Cut potatoes into even strips, at least 10mm thick
  • Soak potatoes in cold water for 1 hour
  • Deep fry in a large skillet, using ox fat (or frying oil) at 325° for 5-7 minutes
  • Remove carefully and drain on paper towels until cool
  • Return to frying pan (or fryer) for a second time until Belgian fries are crisp and golden brown
  • Remove from skillet and drain once more
  • Use tongs to place Belgian fries in wax paper inside of a metal serving cone
  • Sprinkle with a bit of salt and enjoy
