The shrimp are sweet and juicy, while the coconut crust is crispy—not greasy. The smoky “jerk” seasoning echoes the flavors first created by the original inhabitants of the Caribbean, the Arawaks. This recipe works well as an appetizer or entrée, and pairs perfectly with Puerto Rico’s national cocktail, the ever-refreshing Piña Colada.
